So, someone posted a temporary workaround that I tried and benefitted from. Alas, I can't find the original post - I just took a screenshot of it. However, if you want to try it, here goes:
NOTE: This will not help one purchase new coins.
Force-close your Wizards Unite app.
Go into your iPhone settings.
Select your Apple ID - most likely the very top bit of settings.
Select Media & Purchases.
Click "Sign Off" .
Close Settings.
Restart your Wizards Unite app.
Go into Diagon Alley and use current coins from vault or pickup your Complimentary Gift.
Go back into Settings and turn on your Media & Purchases again.
I managed to get my Complimentary Gift and grabbed a Silver Key for the first time in yoinks, so ... I hope that this helps.

@hpwulola This is really incredible! Apple part of the In-App-Purchase works fine, the Niantic App is broken (for months now!) and You still send all customers back to Apple! I have a mail from Apple Support that they proved that the error is in the App and therefore the developer (YOU!!!) have to support the customers. But you still didn‘t care! Whatever prove for the purchase is send to you, you are ignoring it and pointing back to Apple! For me it is unbelievable that You are not just put the Gold into the account if You get the prove (screenshot) from the In-App-Purchase. That virtual money, costing You nearly nothing! But instead You are upseting Your customers and - let me call it as it is - stealing their money!

Considering I've spent a fair bit of money on this game, I REALLY don't appreciate being shunted and ignored by both Apple and Niantic over purchasing issues. Looking for help on this site directs me to the chat bot, and the chat bot directs me to this thread, which is no help at all. You can't handle a customer issue by assuming you know what my problem is without actually looking into my issue. I'm really not impressed.
Dispute charges with debit/credit card company include screenshots that provides HPWU acknowledgment of ongoing purchase issues without resolution since September 2020, and get re-issued a new debit/credit card. Apple won’t decline a new card card, but this is fraudulent behavior.
When is the anticipated new update going to be released. That should be shared with customers that have paid for a service not rendered.
it is completely unacceptable the way we are being treated! Banned cards, theft of our money, inconvenience- this cannot be right and they should be investigated by trading standards
I have been able to get my complimentary gift, but when I try to purchase gold, I get the same error message. Sometimes, it will say “Purchase complete” and make the noise like it went through, but nothing is added to my bank :(
After missing out on previous complementary gifts etc. I was on the verge of breaking Niantic terms and loading my account on a second (Android) device. Then I saw the following work around. Simple and works a treat. I hope the devs can resolve this issue soon...

There seem to be a number of bugs that aren't really getting fixed. I don't know about anyone else, but I would be willing to skip or postpone an event in order for the developers to take the time to concentrate on fixing the issues that are ruining the game for a lot of people. I haven't had a problem with the store, but it really is unfair for the people who are.
@RlrCoasterQueen Unfortunately, even if they gave you all of the free gifts you have missed, it would mostly be just a whole lot of TTD ingredients. There have bee a few potions and EDMs though, and the spell energy you got would probably last you for days!
After all this time I just want my money refunded. Apple has been really kind to me but can't give me a refund because Niantic won't recognize the flaw in their app. If Niantic at least did that officially, I could take that to Apple and like "hey so that huge charge on my account didn't actually buy anything due to an app error, see?"
I got my complimentary gift today for the first time for months. I tried to buy gold got a pop up saying I had already purchased this and would get the purchase for free and now I can’t use the bank. The fix failed. What should I do?
I signed out of Media and Purchases and signed in with my wife's account. There was an extra verification step. It worked. I was able to buy gold and use gold to purchase potions.
This has gotten ridiculous. Please, get the fix done and push it out. You should be able to trace the failed gold purchases and make them good if the apple account was charged. This is ruining the game and your reputation.
Does anyone have an update on the patch that Niantic is supposed to push to fix this issue? The last I heard they had a coding solution but no timeframe when it will be released into the wild.

This never happened/happens in pogo. Sure, issues popped up but they were addressed and fixed promptly. Why is this still an issue here? It certainly seems like you don’t care.

Switching the Media & Purchases off removes your Music Playlists and access to Non purchased streaming music (if you use Apple Music) until you switch it back on!
Caught me out after I forgot to switch it back on and nearly gave me a panic when I thought I lost all my playlists!

To update my case Apple told me to do a chargeback which I did. They then blocked my account and banned my credit card.
They agreed to unblock the account but not to unban the card so now I have to get a new credit card issued.

Thank you for confirming a rumor--that doing a chargeback on an App Store purchase will result in Apple banning/blocking your account.

I have not been able to obtain complementary gifts since December. Logging out and back in to my account using my Apple phone do not help.
I also cannot purchase items.

I have tried everything mentioned in the post, but I can still not buy things in Diagon Alley.
