Mine tracks from the 1st every time. Keep in mind some people have to open the task list first thing in the morning to have anything track. Mine was like that at first for the foundables and portkey/ ingredient. So I open the list then start hunting/ picking up brews.
As @Nyrmelina mentioned, for the first couple weeks, nothing on the dailys tracked for me if I did not open the Daily chart. It has started keeping track since, but I usually still open it first just to make sure.
I had this happen work a potion that I started at 1:00 AM. Thinking maybe the game was counting me in another time zone? At any rate, I don't start potions that early any more.
@Craeft Yeah when I was checking potions for brill event quest, I noticed that the counts come after potions are collected. And potions do count if started the day before.

It tracks after the potion is finished. But it doesn’t count if you start the potion the day before.
Both this and the daily rewards only work properly if I exit the app completely and restart it first thing in the morning.
@Renjammin - It still counts if you start the day before.
In fact, I just opened mine that I started yesterday and it gave credit.

You need to load your daily quests before you collect your potions or 10 confoundables. Then they count towards your daily quests.
