The Tree Stump and Salamander you'll get from the Event Quest (similar to the daily quests), the Spiders you will get from Fortress challenges, using the Fantastic Fauna and Flora Runestones. The last one you'll get from opening a 7K Portkeys. So yes, you'll only see Unicorns and Buckbeaks.

It looks like you get the salamander in the 4th assignments as a reward for completing it.

According to @darkseraphim666 in a thread s/he created:
Brilliant Buckbeak - found on the map like a normal traceable
Brilliant Unicorn - same as Buckbeak
Brilliant Scorched Tree Stump - rewarded for completing the second page of event assignments
Brilliant Young Acromantula - Fragments randomly awarded for completing wizard challenges while using the brilliant runestones.
Brilliant "Lizard Thing" (haven't actually gotten it yet) - rewarded for completing the 4th page of assignments
Brilliant "Living Log" (lower left item, haven't gotten it yet) - I assume you'll get fragments for this from the event specific "brilliant" portkeys.
Now fin only I actually saw some traces at all. I saw one yesterday in Anaheim/Disneyland
The spiders ARE RANDOM!!! I did 4 fortress (different levels) today. Only got 2 spiders so far.
I got the spiders doing level 5 ruins (fortress) every time. Other than that, I am only seeing Buckbeak and Unicorn as well.
I'm still trying to find Magiziologist foundables to complete the 2nd quest!! Ugh....
How many quests is it total?
